Has not been back here for a while... other than the usual appetizers and desserts, the Manager recommended a new pasta and risotto.
For the pasta, we had linguine which is paste that is flat like fettuccine, and yet narrow like spaghetti, somewhere like our mee pok. Interestingly, Linguine means "little tongues" in Italian.
Contrary to popular belief that pasta and pizza are common Italian meals, the risotto is a more staple Italian food. The dish might look a little similar to our chinese porridge but it's require much cooking efforts that it looks. Risotto is made by first braising the rice and allowing it to absorb the cooking liquid, usually broth. The actual braising of the rice is a standard procedure starting with the rice being toasted in a soffrito (chopped vegetables such as onion, garlic, carrots and celery), before broth is ladled in slowly. Sounds time consuming, right?
